Salsa estilo romesco (romesco-style sauce)

To visit Spain is on my bucket list; it’s culture, architecture and especially its gastronomy has always caught my attention.  I remember growing up I used to love watching Spanish cooking T.V shows (Thank God for cable!). Spanish food is delicious and whether it’s the famous paella or the tapas; or delicious drinks such as Sangria or Tinto de Verano, its cuisine is well-known all over the world.

In honor of my love for Spanish food today I’m sharing a recipe inspired in a traditional sauce from Spain: Romesco Sauce which is a nut (usually Marcona Almonds) and roasted red peppers-based sauce that goes really well with fish and seafood in general, you can use it as a dipping sauce for veggies as well.

There are different variations to the original recipe, for this one I’m adding Clamato® The Original Tomato Cocktail for a fresh twist, plus other  ingredients  that I found at my local Walmart;  adding Clamato® Tomato Cocktail instead of fresh tomatoes and vinegar, is a great way to save time, and it helps to add flavor to the Romesco sauce.

Romesco sauce is often served with seafood which makes it perfect for Lent season, but can also be served with a variety of other foods.

Here is the recipe:

Salsa estilo Romesco (Romesco-Style sauce)

  • 1/2 Cup Clamato® The Original Tomato Juice
  • 1 red roasted pepper, seeded and chopped
  • 1 garlic clove
  • 1/4 cup blanched or slivered almonds
  • 1 Tbs. smoked paprika
  • 1 slice stale white bread, cubed
  • 1/4 cup olive oil
  • salt and black pepper to taste

Preparation:

-Combine all the ingredients in a food processor or blender until smooth and thick. Serve with seafood, fish or even vegetables.

Bién fácil! (Very easy!)
