Who knew you could make fries out of yucca? And they are delish! The fries are made with the cassava root which is a plant native to South America.
The Yucca has become a well known vegetable here in the states, you can find it almost everywhere and people can prepare different recipes with it. A great way to prepare this starchy vegetable is boiled. We boil the Yucca and then we make a vinaigrette dressing with onions, olive oil and white vinegar to drizzle on top. We also like it fried; and I’m going to show you today how to make this scrumptious alternative to French fries.
You have to peel and boil the yucca before frying.
I like to cut the yucca and remove the inner core before frying it.
