Sharing today a traditional Easter recipe… Sweetened Beans!

Compartiendo hoy una receta tradicional de Pascua…Habichuelas con Dulce!

habichuelas-con-dulceSweetened Beans: it is a dish typical of the Dominican Republic and is eaten especially in Lenten season. This dessert is traditionally garnished with milk cookies but in other regions of the country people eat it with casabe; which is a traditional flat bread made out of yuca or the cassava root.

This dish is made with red beans, milk, sugar, coconut milk and spices, We also add sweet potatoes for a thicker and creamier consistency.

Las Habichuelas con dulce: es un plato típico de la República Dominicana y se come especialmente en tiempo de Cuaresma. Este postre se decora tradicionalmente con las galletas de leche pero en otras regiones del país las personas lo comen con casabe; que es un tradicional pan de yuca.

Este plato se hace con las habichuelas o frijoles rojos, leche, azúcar, leche de coco  y especias. Tambien se le añade batatas o camotes para una consistencia más cremosa.

Here is the recipe/aquí está la receta.

  • 4 cups of red beans/4 tazas de habichuelas rojas
  • 5 to 6 cups of water to boil the beans/5 a 6 tazas de agua para hervir las habichuelas
  • 1 (12oz)can evaporated milk/1 (12 oz) lata de leche evaporada
  • 1 can (about 1½ cup)  coconut milk/1 lata (1½ taza) de leche de coco
  • 1 (14oz) can condensed milk/1 (14oz) lata de leche condensada
  • 1/2 cup brown sugar/1/2 taza de azúcar morena
  • 1/2 pound of sweet potatoes, peeled and diced/1/2 libra de batatas o camotes, pelados y cortados en cubos
  • 3 cinnamon sticks/3 astillas de canela
  • 1/2 teaspoon of whole cloves/ 1/2 cucharadita de clavos
  • 1/2 teaspoon of whole allspices berries/ 1/2 cucharadita de malagueta
  • 1/4 teaspoon of salt/ 1/4 de cucharadita de sal
  • 3/4 cup of raisins/3/4 taza de pasas.
  • 1 teaspoon of butter/1 cucharadita de mantequilla
  • Milk cookies to garnish/Galletas de leche para acompañar

-Wash the beans and then boil in abundant water for about an hour./ Lava las habichuelas y luego hierve en abundante agua alrededor de una hora.

If necessary, add more water while boiling the beans. Don’t let them dry!

Si es necesario, añade más agua mientras las habichuelas hierven. No las dejes secar!

-When the beans are partially cooked (after an hour) add the sweet potato, cinnamon sticks, cloves and allspice berries let it boil until the beans are soft./ Cuando las habichuelas estén casi cocidas (1 hora) añade la batata,  canela, malagueta y clavos. Hierve hasta que las habichuelas estén blandas.

-Remove the cinnamon sticks, cloves and allspice from the water and discard. Don’t worry if you can not remove all the cloves or allspice berries./ Remueva la canela, malagueta y clavo. No te preocupes si no puedes remover toda la malagueta o clavos.

-Put the beans and sweet potatoes with the liquid in which it was boiled in a blender (you might have to do this in steps) and blend until smooth. Strain into a big pot. Repeat the process if necessary./ Pon las habichuelas y las batatas con el líquido en el cual hirvieron en una licuadora (quizas tengas que hacer este proceso en pasos) y licua hasta que este suave. Cuele y transfiera a una olla grande. Repita el proceso si es necesario.

-Pour the evaporated milk, condensed milk and coconut milk into the beans mixture, add the sugar, raisins, butter and salt and let it cook on medium heat for about 20 minutes, stirring regularly./ Vierta la leche evaporada, la leche condensada y la leche de coco en la mezcla de las habichuelas, añada el azúcar, pasas, mantequilla y sal y se deje cocer a fuego medio durante unos 20 minutos, revolviendo con frecuencia.

-Let it cool completely, served chilled./ Deje que se enfríe por complete antes de servir.

      Hey Wendy, No, no tengo una receta para estas galletitas 🙁 Pero puedes usar animal crackers. Es lo mismo.;)
