Summer is here and the grill is on!
I love grilled vegetables, specially when the weather is extremely hot and I want a dish that gets cooked in a matter of minutes.
Because I love zucchini! This lovely vegetable is a great option for the grill and is healthy too.
And eggplant, because my family loves it.
This is how I make my grilled veggies.
I cut the ends and slice the vegetables
Recipe for the seasoning.
For 2 zucchinis and 1 big eggplant you’ll need:
- Garlic powder 1/4 teaspoon
- Onion powder 1/4 teaspoon
- Dry oregano 1/3 teaspoon
- Olive oil. About 1 tablespoon.
- Salt and pepper to taste
Pre-heat the grill. Coat the veggies with the seasoning and grill until they have nice grill marks. Vegetables should be soft.
