Last year we visited Puerto Rico and each restaurant that we visited offered Mayo-ketchup. A simple yet delicious sauce, made with the most simple ingredients: Mayonnaise and Ketchup.
However, this sauce is not just known in Puerto Rico. It is also known in the Dominican Republic. This sauce is a nice complement to the pork sandwich that we eat in my country known as “Chimichurri” or a “Chimi”.
But forget about the “chimi”, ( for now ? )this post is about another famous treat. Tostones! (fried Green Plantains).
In my country, Dominican Republic, Plátanos is an staple food. We prepare mangú (mashed plantains), we add it to soups, we eat it boiled with just onions and a vinegar-olive oil dressing; but my favorite way is fry them. Let me stop…without further ado here is the recipe step by step.

- 4 green plantains peeled and cut into 1 inch pieces
- 2 cups Canola oil for frying
- Salt to taste
- 2 tbsp Mayonnaise
- 2 tbsp Ketchup
- Mix the Ketchup and Mayonnaise. Set aside
- Heat the canola oil on high heat. Peel the plantains and cut into 1 inch pieces.When the oil is hot. Add the plantains and fry until golden brown.
- Remove the plantains from the oil. Mash them with a tostonera or the bottom of a “pilón” (mortar) until flat. fry again until crisp. serve with the Mayo-ketchup sauce.
