Potato and carrot Salad

Who doesn’t like potato salad? Adding carrots to this traditional salad will make it colorful, tasty and healthy. Here’s the recipe

peel and cut the potatoes
peel and cut the carrot

boil the vegetables with the eggs
dice the boiled potatoes

diced the boiled carrots
1 mediun onion, diced

chop the eggs and mix with the boiled vegetables and raw onions

Ingredients
  • 1 1/2 Pound Idaho potatoes peeled and cut in halves
  • 1 Big Carrot peeled and cut in half
  • 1 mediun White onion diced
  • 4 larges eggs Hardboiled, chopped
  • 1/2 cup Mayonnaise
  • 1 Tsp White vinegar
  •   Salt and Pepper to taste
Servings: people
Instructions
  1. Peel and cut the potatoes and carrots. Place the eggs on top of the vegetables in a large pot of salted water. Bring to boil
  2. Boil everything until vegetables are tender but firm. about 15 to 20 min.
  3. Place the eggs in cold water for a few minutes before peeling and chopping them. Let vegetables cool for a couple of minutes as well.
  4. Dice the cooked potatoes, Carrot and raw onion.
  5. In a large bowl combined the vegetables, chopped eggs, Mayonnaise, vinegar, salt and pepper. Mix well and enjoy!

    This potato salad is so simple but so good. I love it with pernil and arroz con gandules. Soooo good together!! Thanks for this recipe!
