Who doesn’t like potato salad? Adding carrots to this traditional salad will make it colorful, tasty and healthy. Here’s the recipe
- peel and cut the potatoes
- peel and cut the carrot
- boil the vegetables with the eggs
- dice the boiled potatoes
- diced the boiled carrots
- 1 mediun onion, diced
- chop the eggs and mix with the boiled vegetables and raw onions

Ingredients
- 1 1/2 Pound Idaho potatoes peeled and cut in halves
- 1 Big Carrot peeled and cut in half
- 1 mediun White onion diced
- 4 larges eggs Hardboiled, chopped
- 1/2 cup Mayonnaise
- 1 Tsp White vinegar
- Salt and Pepper to taste

Instructions
- Peel and cut the potatoes and carrots. Place the eggs on top of the vegetables in a large pot of salted water. Bring to boil
- Boil everything until vegetables are tender but firm. about 15 to 20 min.
- Place the eggs in cold water for a few minutes before peeling and chopping them. Let vegetables cool for a couple of minutes as well.
- Dice the cooked potatoes, Carrot and raw onion.
- In a large bowl combined the vegetables, chopped eggs, Mayonnaise, vinegar, salt and pepper. Mix well and enjoy!
