Brussels sprouts with bacon, onions and garlic

I didn’t like Brussels sprouts until…

My sister in law prepared a dish last year during the holidays and I fell in love. I tried to make something similar and this is what I came up with.

Brussels sprouts with bacon, sweet onions and garlic…yum!

Perfect as a side dish for the 4th of July or any holiday.

Do I need to say more?

First, you need Brussels sprouts

You need to sautéed some onion and garlic.

Add the Brussels sprouts and 1 cup of chicken stock.

And done!

Recipe:

  • 1 pound of Brussels sprouts, washed and halved
  • 4 strips of bacon, chopped
  • 1 medium onion, diced
  • 2 garlic cloves, sliced
  • 1 cup of chicken stock
  • salt and pepper to taste

Preparation: Cut off the ends of the Brussels sprouts and remove any of the yellow outer leaves.

Cook the bacon in a medium skillet over medium-high heat. Remove and set aside.

Toss some of the fat from the cooked bacon and in the same skillet cook the onion and garlic for a couple of minutes.

Add the Brussels sprouts and cook 2 to 3 minutes. Add the chicken stock, salt and pepper to taste and let cook until Brussels sprouts are tender.

Transfer to a plate and add the bacon.

Tropical Fruit salad

When it comes to fruit salad, I don’t have a recipe.

I add my favorite fruits , maybe some lemon or orange juice and voila!

For this salad I used…

  • 1 Cup of fresh papaya, diced
  • 1 Cup of fresh pineapple, diced
  • 1/2 a Cup of mangoes, diced
  • 1/4 Cup fresh blackberries
  • 1/4 Cup fresh blueberries

Mix everything together in a bowl, add fresh lime or orange juice(optional) and mint leaves.

Another idea…add shredded coconut, honey or granola for extra nutrients.
