7 Great Cooking tips to simplify your life

Easy tips for the avid ( and not so much) cook.

1-Make your own chicken stock and freeze in individual containers. That way, when you want to prepare a recipe (like soup) that requires this ingredient, you can simply pull it out of the freezer.

2-Smelly hands after cutting an onion? DO NOT SCRUB! Place you hands under cold water for about 20 seconds and then wash with soap and rinse.

3-When buying fresh radishes and beets, do not remove the stems and leaves. That way, they won’t wither.

4-Keep herbs fresher longer. Rinse and remove any dirt and place in an airtight plastic bag.

5-Freeze fresh chopped vegetables for quick soups.

6-Do not throw away brown bananas. Freeze them and use them to make smoothies.

7-For flavorful mashed potatoes, boil the potatoes with 1/2 of a small onion. Toss the onion after it is cooked.

Sausage Potato Hash

A complete dish, perfect for breakfast or any time of the day!

If you have enough time in the morning to prepare a hearty breakfast for your loved ones; this potato-hash is perfect.

The hash is a combination of chopped meat or sausage, potatoes, onion, pepper and spices.

A fried egg is the perfect protein for this succulent dish.

I love to prepare it on Sunday mornings, when we have a long day ahead of us and we need extra energy.

For this recipe I used “Longaniza” which is a traditional Dominican sausage, but you can use any other type like chorizo or Italian Sausage.

Sausage Potato-Hash

Prep Time: 20 minutes

Cook Time: 25 minutes

2 people

Ingredients

  • 2 cups of diced red potatoes
  • 1 medium onion, diced
  • 1 bell pepper or 2 frying peppers. diced
  • 1/2 cup of chorizo, Italian sausage or longaniza, chopped
  • salt and black pepper to taste

Instructions

  1. In a large pot, boil the diced potatoes until tender. Drain and set aside.
  2. In a large skillet, cook the sausage over medium-high heat until cook through. Remove and set aside. In the same skillet where the sausage was cooked add the onion and pepper cook until tender. Stir in the pre-boiled potatoes and cook until lightly browned. Add the cook sausage and season with salt and black pepper.
