Easy Recipe: Empanadas de Pizza (pizza turnovers)

Breaking news mis amigos, Summer is almost over! I can’t believe we are in August, soon enough it will be September and the kids will go back to school again! It just hit me as I was doing some shopping Walmart and saw the aisle full of school supplies.

So guess what?

Yo me aproveche and stocked up with some my favorite items to have at home when the craziness of back-to-school starts.

Let me explain…

September is a hectic month for me; I do love cooking but sometimes I just don’t have a lot time to create complicated meals, therefore I always like to have in my kitchen ingredients that allow me to create an easy meal in no time, such as Pace® Salsa with its genuine southwest flavor and made with handpicked vegetables or V8 Splash® with its fruity flavors the family will love, made with real fruits and vegetables.

So today I want to show you an easy recipe: Empanadas de Pizza.

For us Latinos, empanadas are a common finger food. Normally, we fill the empanada discs with cheese or meat, but this time I wanted to make empanadas de pizza, something completely different of what I’m used to.

The recipe for empanadas de pizza is simple to make, with some ingredients that you probably have at home; like mozzarella cheese, oregano, pepperoni and Prego® Italian Sauce known for its perfect balance of sweet and savory Italian flavor, and a homemade taste the whole family will love.

Empanadas de Pizza

Ingredientes:

  • 10 empanada discs, thawed
  • 1 cup mozzarella cheese, shredded
  • 1/2 cup pepperoni, chopped
  • 1/2 cup Prego® Italian Sauce-Traditional flavor
  • 1/4 teaspoon dry oregano
  • 2 cups of vegetable oil for frying

Steps:

  1. In a bowl combine the mozzarella cheese, pepperoni, oregano and Prego® Italian sauce.
  2. Using a spoon combine all the ingredients well.
  3. Place about one tablespoon of the filling on one side of the empanada disc. Fold over and press firmly with an empanada fork or a regular fork.
  4. In a large pot over medium-high heat, heat the oil and fry the empanadas until golden brown on both sides.
