Hola! Are you enjoying this weather just like I am? I think so. I love the fact that we can enjoy the outdoors, fire up the grill and spend quality outdoor time with the family. New Jersey can get really hot and humid during the summer and that’s the perfect excuse to enjoy outdoor activities like camping, going to beach or a simple picnic or cookout in a nearby park. I mean, who wants to be inside the house when its like 85°outside? Not this Caribbean girl!

When it comes to cookouts I like to prepare easy and refreshing recipes.Today I want to share my recipe for a colorful chickpea salad; perfect for any outdoor activity. its very refreshing and very light! The original recipe calls for Jalapeño peppers but I found a condiment that gives my salad extra flavor: El Yucateco® Green Habanero Hot sauce! which is made with fresh green habanero peppers, garlic, select spices and seasonings. You can also add El Yucateco® Red Habanero Hot sauce, this one is made with red habanero peppers, tomato, and select spices and seasonings; another flavor that you can use is El Yucateco® Black Label Reserve Hot Sauce-Created from fire roasted habanero’s, this rich smoky sauce stands out from all others with its unique flavor and appearance. For this recipe I prefer the green habanero sauce since it packs a little more heat than the red habanero but it has less vinegar than the average hot sauce.

Here is the recipe and step-by step tutorial for this refreshing chickpea salad.

Serving: About 4 people

  • 1 can (15 oz) chickpeas, drained
  • 1 medium onion, diced
  • 1 cucumber, peeled and diced
  • 1 bunch of cilantro, chopped
  • 1 red tomato, diced
  • 2 tablespoons of El Yucateco® Green Chile Habanero
  • The juice of one lime
  • salt to taste

Preparation: In a large bowl, add the chickpeas, cucumber, tomato, onion, cilantro, the lime juice, green chile habanero sauce and salt. Combine and place in the refrigerator to chill.

chickpeas salad with lime, onion and cilantro dressing

 

Summer this year has been unbearable. The high temperatures make it almost impossible for me to cook. I have been preparing smoothies, sandwiches and salads because they do not require a lot time in the kitchen.

One of my favorite salads is this one, made with chickpeas, cucumbers, tomatoes and radishes. The chickpeas are high in protein therefore it will keep you satisfied for a long period of time while the cucumbers, radishes and tomatoes are really refreshing.

Ingredients for the salad:

  • 1 Can of chickpeas, drained and rinsed
  • 3 Radishes, washed and diced
  • 2 Persian cucumbers, washed and diced
  • 2 Roma tomatoes, washed and diced

Dressing

  • 1 small onion, chopped
  • the juice of 2 fresh limes
  • 3 tablespoon of olive oil
  • 1/4 cup of chopped fresh cilantro, washed thoroughly
  • salt and pepper to taste.

In a small bowl mix the onion, cilantro, lime juice, olive oil, cilantro, salt and pepper. Set aside.

In a large bowl combine all the vegetables and add the dressing.

Enjoy for lunch or dinner…
