Yaniqueque (JohnnyCakes)

Yaniqueque (Johnnycake) is a very popular fried bread in Dominican Republic.

We don’t know exactly where did it come from, who created it, or when. All We know is that it is a delicious treat any time of the day.

If you decide to visit one of Dominican Republic beaches you have to stop at one of the food stands and grab your “yaniqueque” with salami frito (Fried Salami).

Prepare them at home with this simple recipe and don’t forget your coffee or hot chocolate to go along with it.

Beef stir-fry

A couple of years ago I came across a recipe for the perfect Stir-fry. Actually, the name of the recipe is “Chili Beef Stir-Fry with scallions and snow peas” by Aida Mollenkamp…OMG! the best!

Her recipe is a bit spicy. It calls for two tablespoon of garlic-chili sauce which I reduced to one tablespoon…But, don’t get me wrong, I love spicy food. You can add any vegetable that you can think of and pair it with rice or noodles.

This is my version, slightly different, but still pretty good!

Whisk the chili-garlic sauce, honey, mirin, sesame oil, soy sauce and corn starch together.Set aside

 

Cut the beef in thin pieces and cook.

Remove the beef from the frying pan. In the same pan and over low-medium heat, add another tablespoon of oil, the minced garlic and ginger.

Add the snow peas and scallion and cook until bright and green. Add the Bok Choy and stir.

Add the cooked beef

And the Chili-Soy dressing

Yum!

  1. whisk the chili-garlic sauce, soy sauce, mirin, sesame oil, honey and corn starch. Set aside
  2. Heat one tablespoon of canola oil in a nonstick skillet over high heat. Pat the meat dry and cook stirring until browned. Remove to a plate.
  3. The same skillet over medium-low heat. Add another tablespoon of canola oil. Cook the garlic and ginger until fragrant. Stir in the snow peas and scallions. Cook until bright green. Add the bok choy and stir again.
  4. Add the cooked beef, fallowed by the chili-sauce dressing. Toss to coat and transfer to a serving plate. Sprinkle with scallions.

Homemade strawberry sauce

Next time you go food shopping and strawberries are on sale…Buy them! and freeze them!

You can make a shake, strawberry-lemonade or make a simple strawberry sauce, just like I did. YUM ?

Place the strawberries in a saucepan.

Add 1/2 cup of sugar, a pinch of salt, 1/4 of teaspoon of vanilla, one stick of cinnamon and water. Let it boil for about 10 minutes.

Mash the strawberries.

And let them boil for another 20 minutes.

Serve over pancakes or ice cream.

  1. Place all the ingredients in a saucepan. Add water and let boil on high heat for about 10 minutes. Reduce the heat to medium and mash the strawberries. Let it boil on medium heat for another 20 minutes or until the sauce has obtained a thick consistency.
