chickpeas salad with lime, onion and cilantro dressing

Summer this year has been unbearable. The high temperatures make it almost impossible for me to cook. I have been preparing smoothies, sandwiches and salads because they do not require a lot time in the kitchen.

One of my favorite salads is this one, made with chickpeas, cucumbers, tomatoes and radishes. The chickpeas are high in protein therefore it will keep you satisfied for a long period of time while the cucumbers, radishes and tomatoes are really refreshing.

Ingredients for the salad:

  • 1 Can of chickpeas, drained and rinsed
  • 3 Radishes, washed and diced
  • 2 Persian cucumbers, washed and diced
  • 2 Roma tomatoes, washed and diced

Dressing

  • 1 small onion, chopped
  • the juice of 2 fresh limes
  • 3 tablespoon of olive oil
  • 1/4 cup of chopped fresh cilantro, washed thoroughly
  • salt and pepper to taste.

In a small bowl mix the onion, cilantro, lime juice, olive oil, cilantro, salt and pepper. Set aside.

In a large bowl combine all the vegetables and add the dressing.

Enjoy for lunch or dinner…

  1. Oh this is a great salad. I am a vegetarian & I add chickpeas to my salads often because I am alway looking for protein. I need to share this for my veggie friends!

  2. This looks like the perfect summer salad! I’ve been eating lots of chickpeas lately too! I just recently learned about aquafaba, have you heard of it? It’s the juice that the chickpeas are soaking in! Vegans use it as an egg substitute. I saved it and made marshmallow fluff with it, I was shocked it turned out!
