Beat the summer heat with a refreshing Greek salad and a delicious homemade balsamic vinaigrette.
Summer has been extremely hot, I mean…unbearable! and when the weather is so hot, Who wants to be in the kitchen? not me. One way to beat the heat is by eating refreshing and tasty salads. One of my favorite salads of all times is the Greek salad; the combination of crisp lettuce, Kalamata olives, cherry tomatoes, cucumber and feta cheese, mixed with a delicious balsamic vinaigrette is very flavorful.
Note: If you want to make the salad extra healthy you can substitute the lettuce for a dark green leafy vegetable such as spinach or kale.
Stuffed grape leaves are another great addition to Greek salads; the leaves are stuffed with rice, lemon and herbs and you can eat them as appetizer or even as a main dish. So if you get to spot them next time you visit the market grab them and try them–they are really tasty.
