Coquito (Holiday coconut Drink)

Serves: 4 to 6 people
  • 1 can-12oz Evaporated milk
  • 1 can-15oz cream of coconut
  • 1 can-13.5oz coconut milk
  • 1 can condensed milk
  • 2 Egg yolks (optional for a thicker consistency)
  • ½ teaspoon vanilla
  • 1 teaspoon ground cinnamon
  • a pinch of cloves, ground
  • ½ cup white rum
  1. In a double boiler over low heat, combine the eggs yolks and evaporated milk. Cook by stirring constantly until getting a thick mixture. About 7 to 10 minutes.
  2. Transfer the egg mixture to a blender with the rest of the ingredients and the rum. Blend until nice and smooth.
  3. Pour into glass bottles and chill really well before serving.
If making the drink without the eggs: just blend the coconut milk, coconut cream, evaporated milk and condensed milk with the spices and vanilla and chill overnight.
