Delicious Matcha Cupcakes with Green Tea Frosting!

These Matcha Cupcakes are easy to make and so delicious!

I love to bake and if there’s one food trend I LOVE incorporating with my recipes, it would have to be MATCHA! This delicious green tea extract has been used in so many drinks and dishes that I decided to create my cupcake recipe for a change. It was one of the best decisions I’ve ever made because once I bit into this creamy frosting and cake texture, I was wowed and kept coming back for more. Of course, I left some for my loved ones to taste as well!

Whether you want to make some for Christmas (it’s green for the festive vibe!) or just because, then here’s my perfect Matcha Cupcake with Green Tea Cream Cheese Frosting recipe!

Matcha Cupcake with Green Tea Cream Cheese Frosting

This bittersweet Matcha Cupcake recipe has the perfect balance of flavors, from the green tea extract down to the cream cheese frosting. It’s also very beneficial for your health, which is an enormous and delicious plus for sweet tooths out there.

Preparation time: 15 minutes
Cook time: 20 minutes

This recipe serves 12 cupcakes.

• 1 1/4 cups of all-purpose flour
• Half a teaspoon of baking powder
• Quarter teaspoon of baking soda
• One tablespoon of powdered Matcha Green Tea sifted
• Pinch of salt
• Two eggs
• Half a cup of sifted brown sugar
• Half a cup of softened unsalted butter
• Half a teaspoon of vanilla extract
• 3/4 cup of Greek yogurt

• One package of cream cheese (eight ounces), softened
• Three tablespoons of Greek yogurt
• Two teaspoons of sifted powdered Matcha Green Tea
• One cup of sifted powdered sugar

  1. Preheat the oven to 350 degrees Fahrenheit while adding cupcake liners to the muffin tin.
  2. Mix all the dry ingredients (except sugar) in a bowl and set aside
  3. Use an electric mixer to beat the eggs and sugar until it has a creamy consistency, preferably around three minutes.
  4. Add the butter and vanilla extract into the egg mixture, mixing it for another three minutes before adding the Greek yogurt.
  5. At a low speed, slowly add in the dry ingredients until everything is just combined.
  6. Fill the cupcake liner only about 3/4 of the way batter.
  7. Bake the cupcakes for about 15 to 17 minutes. You can also use toothpick test to see if it come out clean (meaning it’s ready)
  8. Allow it to cool while you make frosting.
  9. Beat the cream cheese and Greek yogurt together, then add the Matcha Green Tea Powder and sugar. Mix until light and fluffy.
  10. Once the cupcakes are cool, pipe the frosting on the cupcakes. Serve and enjoy!

Pro-Tips You Should Take Note Of
Here are some tips I learned along the way to make this recipe even better:

• Always make sure that you use fresh ingredients. Avoid letting them sit on your kitchen top for long while you’re baking. Take note that cream cheese can only sit out for a short period of time!
• While you can use any type of green tea powder, make sure that it comes from a reputable brand and without any artificial flavorings or preservatives that would ruin its flavor.
• While I recommend you to eat it while it’s hot, you can still store it in your fridge for three days at the most before it spoils. Do NOT reheat the cupcakes, as the green tea cream cheese frosting would melt! You will know if the cupcakes shouldn’t be consumed if it looks soggy or with a different smell and look.
• When piping the frosting, do so carefully but with speed, since forming the frosting too slowly or quickly would make it look sloppy. Practice makes perfect here!
• Avoid over-beating the ingredients, as this will make the cupcakes stiff and unpleasant to chew. You can use a spatula to beat it slowly instead of a mixer. Also, avoid using too soft butter or cream cheese, since it will end up making the cupcakes have a too-soft consistency.

I hope you enjoyed my Matcha Cupcake recipe. You can take this dessert with you anywhere, and anyone will enjoy it. As long as you avoid making the same baking mistakes and put your hobby of creating sweet delights into the passion, then this recipe will be such a hit. Gardening DIY: Tin Can Plant Holders

This shop for Tin Can Plant Holders has been compensated by Collective Bias, Inc. and its advertiser. All opinions, ideas and pictures are mine alone. #PureLife35pk #CollectiveBias

Me encanta la jardinería (I love gardening), in fact, before we bought our first home I was always looking for ideas for indoor gardening.  Now that we have a house with a yard, it is easy for us to plant vegetables and fruits that I couldn’t plant before, and even so, I still like to keep small planters inside the house. Small planters serve as beautiful home décor, plus you get to have fresh herbs in your kitchen all year round.

Side note: If working outdoors, keep in mind that during Spring and Summer months it can get really hot. Make sure that you do your gardening early in the morning and always keep yourself hydrated. As a matter of fact, I always have bottles of Nestlé® Pure Life® water on hand for those days when I need to stay in the yard working extra hours.

Since today is all about gardening, I want to share an easy DIY for Tin Can plant holders. These planters are great for the indoors and outdoors. Make them by recycling empty cans of food; you can paint them or add some accents y listo! beautiful planters in no time.

What you need:

  • Empty tin cans (washed and dried completely)
  • Hammer and nail (to make holes)
  • Rope or twine
  • Hot glue gun
  • Hot glue sticks
  • Soil
  • Small plants such as cilantro, tomillo, strawberry etc.

Make them:

  1. Prep the cans by removing all labels and making sure there are no sharp edges and metal shards from opening the can.
  2. Use the hammer to make 4 drainage holes on the bottom of each can.
  3. Using the glue gun, place a bit of glue on the edge of the can and wrap the rope around it until you reach the bottom. Cut the rope and set it with a little bit of hot glue.
  4. Fill the tin can with soil and plant your favorite herb or flowers.

Now, all you have to do is find the perfect spot for your planters!

You can find most of the supplies by visiting Walmart. By the way, I found a great deal for Nestlé Pure Life Water-35 pack! this is how it works…As shoppers, we are receiving a great value by getting 3 more bottles for the same price as the old 32 pack! If the 35- pack of Nestlé Pure Life is not available at your local Walmart, please ask a store manager about getting the product in your area, cause this is a great deal! I mean, you can definitely find Nestlé Pure life 24 pack at, but make sure to visit the store for the 35pk!

Hope you like this idea for DIY-tin can plant holders as much as I do; you will have beautiful plants and herbs inside and outside your home.

Lindos verdad? (Aren’t these cute?)

Remember, now that’s is getting warmer you need to keep yourself hydrated and Nestlé Pure Life is committed to delivering pure, great-tasting water to you and your family; Every bottle is filtered through a 12-step quality process. Pure Life is re-launching in mid-May and will have a new packaging so be on the lookout! Great to stock up for the warmer weather.

Must haves for a Latina Blogger

This shop of must haves for a Latina blogger has been compensated by Collective Bias, Inc. and its advertiser. All opinions are mine alone. #SigueConAdvil #CollectiveBias

It’s almost 2017! and as I write this post I reminisce on my early days as a blogger, when I didn’t think I was going to make it this far in the blogger world; It hasn’t being an easy ride but I’m still on the bus and I love it! Blogging has given me the opportunity to share something that I love and that is part of my culture–cooking.

Blogging takes a lot time and as Latina which her first language is not English, it takes double the work. In addition, I have a full-time job and a beautiful family that requires my time as well.  Sometimes it can be a little hard to keep up with everything, but I found a way to keep myself organized and to avoid headaches.

Today I want to share my “Must Haves” as a Latina Blogger. Of course there are many items that we must have to be successful writers/bloggers; but some of these items I keep at home and others I carry in my bag at ALL times.

1-An English-Spanish Dictionary at home: I know I can use my phone, but I’m old school and I love to have a book to reference. Sometimes I find myself second guessing the spelling of a word, so having a dictionary is always handy.

2-Smart Phone: Especially when you can not carry your DSLR camera everywhere and need to take pictures.

3-A Small Planner/Notebook and a pen: To write “in-the-moment” ideas and  datelines.

4-Advil®Tablets: For those minor pains and aches (headaches, muscle pains, minor arthritis pains) that potentially slow you down.

Again, being organized can help you avoid headaches and minor pains, but sometimes it’s just inevitable. So next time you head to Walmart make sure to get Advil® Tablets which is the #1 pain reliever*. Advil® Tablets provide tough pain relief that aligns with my lifestyle as a passionate Latina blogger; I get to continue doing all the things that are important to me and of course my Familia.

If you are a busy Latina and you are contemplating the blogging  world; or if you are already blogging, I hope these tips help you. Also, See how others are experiencing relief with Advil®.

How do you keep yourself organized? Share!
